More a state of mind than a place, this palate-driven republic is one without borders. Inspired by the plant hunters of the Victorian era, we scour the globe for exotic botanicals to craft irresistible cider.
The space features ciders that can be enjoyed at the bar or at the cyder garden patio. There is also the option of taking ciders home in a unique Newtopia Cyder growler. Featured throughout the taproom is 100-year old reclaimed eucalyptus wood that survived the 2003 Cedar Fire, where Scripps Ranch residents had to be evacuated.
Rusty Figgens, Master Cyderist, Master distiller and owner of The Ellensburg Distillery, second licensed distillery in Washington. Rusty has been working in the winemaking industry for 25 years and the spirits industry for a decade.
Rick Moreno, Founder and Cyderist, certified SIPS distiller, California Artisanal Distillers Guild member, United States Association of Cider makers member and co-owner of Toronado Seattle specializing in craft cider, cocktails and elevated casual dining.
Jennifer Hays Moreno, Co-Founder, is currently an employee-owner of a healthcare business for the past 5 years. Has had many thriving relationships in business in healthcare and in the craft beer industry.
Ryan Kinnerup, Mood Director & Distribution, Arizona State University, Graduated 2002: wine & spirit distributor for Diagio beverages. Currently has his own fine wine & spirits sales consulting firm in San Diego, CA.
Sean Kelley, Creative Director at Mother Sponge, Founding and managing partner of Mother Sponge. Sean’s recent projects include full scale branding services for, North Park Brewing Company, Unsung Brewing Company, San Diego Brewers Guild, San Diego Beer Week; and San Diego’s award-winning Societe Brewing Company.
- Indian Pale Cyder – The IPC dry-hopped cider is produced with a blend of tropical hops to make a distinct aromatic off-dry cider with an apple forward taste.
- Semi-Sweet Cyder – An off-dry cider with hints of elderberry flowers and eucalyptus.
- Belgian Cyder – An international cider made with pineapple, cardamom and Belgian spices.
- Wild Cyder – An off-dry and fruit cider made with marionberry.
